Gwyneth Paltrow’s Blueberry Muffins

I’ve always admired Gwyneth Paltrow. Maybe it’s because of her classic style and beauty, or maybe it’s because of her fearless drive to dabble in any area that interests her. Acting, singing and now cooking? When not busy doing one or all of the above and in addition to running her succesful (sometimes criticized) GOOP newsletter, she has also put together a cookbook true to her heart. Called ‘My Father’s Daughter’ this book commemorates her family’s history with favourite recipes, ones inspired my her parents and ones created now with her own children. It’s a combination of recipes that cover various ethnicities, a range of ingredients and essential basics that anyone should know.
Since I have a weakness for anything sweet, I thought I would try a recipe from the dessert section: ’Blythe’s Blueberry Muffins’ on page 229. Gwyneth’s mother made these for her while growing up and she claims they are ‘the best ever’. What’s refreshing is how simple the ingredient list is and that they aren’t loaded with sugar, making these a great treat when you’ve craving something sweet.
Ingredients:
8 tablespoons unsalted butter, melted & cooled
2 organic large eggs
1/2 cup milk
2 cups unbleached all-purpose flour
3/4 cup + 1 teaspoon granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
2 1/2 cups fresh blueberries
Directions:
-Preheat the oven to 375 degrees F. Line a 12-cup muffin tin with papers.
-Whisk the butter, eggs and milk together in a bowl. In another bowl, whisk together the flour, the 3/4 cup of sugar, baking powder and salt. Stir the wet ingredients into the dry ingredients and fold in the blueberries. Divide among the muffin cups and sprinkle the muffins with the remaining teaspoon of sugar.
-Bake until a toothpick tests clean and the muffins are golden brown, 25-30 minutes. Best to eat these warm. Makes 12 muffins.
Verdict:
These muffins are moist and packed with blueberries, making them a must-have recipe when you’re looking for a simple, quick snack. Although Gwyneth’s are better looking than mine, they still taste delicious! Next time I might try adding other berries in for a twist on this classic. Enjoy!
